Greek Chicken And Potato Skillet

Ingredients

  • 2 pounds Russet Potatoes, chopped
  • 1.5 pounds Boneless Skinless Chicken Breast, chopped
  • 10 ounces Cherry Tomatoes, halved
  • 6 ounces Crumbled Feta
  • 2.25 ounces Can Sliced Black Olives, drained
  • 3 tablespoons Olive Oil, divided
  • 1 tablespoon Garlic Powder, divided
  • 1 tablespoon Onion Powder, divided
  • 0.5 tablespoon Oregano
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Thyme
  • 0.5 teaspoon Dill

Directions

  1. Start by parboiling your chopped potatoes, strain them. Transfer then to a mixing bowl and season with 1/2 Tbsp garlic powder, 1/2 Tbsp onion powder, 1/2 Tbsp oregano, 1 tsp thyme, 1/2 tsp dill, and a little salt. Mix will and set aside.
  2. Season your chopped chicken with 1/2 Tbsp garlic powder, 1/2 Tbsp onion powder, 1 tsp smoked paprika, and a little salt. Mix and set aside.
  3. Heat a large skillet over medium-high heat and add in 1 Tbsp olive oil. Once your oil is hot add in your seasoned chicken and cook until no longer pink in the middle.
  4. Once your chicken is cooked through, reduce the heat to medium and add in your tomatoes. Let those cook until the skin on the tomatoes starts to blister. When that's done, remove from the skillet and set aside.
  5. Return that same skillet back to the stove over medium-high heat and add in 2 Tbsp of olive oil. Add in your seasoned potatoes and cook until golden brown.
  6. When you're happy with the cook on your potatoes, add your chicken and tomatoes back in, reduce the heat to low, mix, then top with your crumbled feta and black olives.
  7. Taste and add salt and pepper to preference.
