Ingredients
- 2 ounces Beef tenderloin steaks
- 2 tablespoons Black peppercorns, crushed
- 1 teaspoon Salt
- 2 ounces Butter
- 1 tablespoon Olive oil
- 0.5 cup Cognac or brandy
- 0.5 cup Heavy cream
Directions
- Season steaks with salt and press crushed peppercorns onto both sides.
- Heat olive oil and butter in a pan over medium-high heat.
- Sear steaks for 3-4 minutes per side for medium-rare, then remove from pan and set aside.
- Carefully add cognac or brandy to the pan and ignite to burn off alcohol.
- Reduce heat and stir in heavy cream, simmering until thickened.
- Return steaks to the pan, spoon sauce over them, and serve immediately.
